Love tofu? Did you know tofu and soy milk can be used in baking to replace eggs or milk? I know… I had some preconceived notions about dry cookies or oddly textured cakes, but these new recipes developed for VitaSoy by food editor and pastry chef Christina Ng changed my mind. “I have incorporated the use of a traditional Chinese ingredient in a variety of baked items, while adding a twist with Asian flavors to actor to the Asian palate,” says Ng. “This re-interpretation of western desserts with tofu is in line with today’s lifestyle that places emphasis on great taste that is healthy.”
First up, these Sweet Potato Tofu Walnut Muffins. These mildly sweet and spicy goodies have a flavor reminiscent of pumpkin and don’t contain any milk or butter (or any other dairy products).
Instead, San Sui Silken Tofu is pureed with a little unsweetened soy milk, creating a texture which is both moist and light. If no one had told me these muffins contained tofu, I would never have guessed it!
Next up, an Asian-influenced version of one of my favorite sweets… amaretti. Like the traditional Italian cookie, they are rich with almonds. However, Christina’s recipe also adds San Sui Black Soybean tofu and black sesame seed powder.
These Black Sesame Tofu Amaretti Cookies are dense with almond paste and have the added toasty flavor of black sesame!
According to VitaSoy, San Sui Tofu is made with non-GMO soybeans and no preservatives. Chef Christina Ng has developed 12 recipes in all, including Green Tea Tofu Mousse Cake, Honeydew Tofu Panna Cotta, Red Bean Tofu Donut… and even Kimchi Tofu Soda Bread!
